Firstly, because we wanted to highlight the work and know-how of the French farmers. Nothing better than the "Made in France ", a real guarantee of quality for our raw material.

Secondly, we wanted to bring up to date a protein too often set aside. From an agricultural perspective, culture not only helps to increase the yield of the next crop , but its introduction into rotation also allows a significant reduction of environmental impacts related to the lack of nitrogen fertilizers . Especially:
- less fossil energy consumption (40 %*),
- less emission of greenhouse gases (50 %*) and
- less acidifying gases (80 %*).
Peas also induce a reduction in the consumption of pesticides.

2. A complete valorization
Peas are already known for their nutritional propreties since it is both a source of energy (44% starch) and protein. But at Olygose, we wanted to use this plant in full, to develop a "treasure" that has not been valorized yet; alpha-galacto-oligosaccharides!
